Breakfast to Go

This recipe is a life saver if you are in a rush in the mornings before work or school because it allows you to make it the night before or even a week in advance!

you will need a jar, granola, trail mix, oats, almond butter, milk
All you have to do is pour all the ingredients into the jar and close it tightly!

I normally start with the granola and fill up the jar a quarter of the way
Then I add some oats, until the jar is about halfway full (this cuts the sugar and cuts the cost of ingredients)
Next I put in some trail mix (nuts, berries, seeds) and top it off with a dollop of almond butter- or whatever nut butter you prefer...

I usually make a jar up for me and a jar for Grant and leave them on the counter for us to grab on our way to work. Just before leaving the house I add in a splash of milk and by the time I get to work the mixture is kind of a cool, creamy, crunchy delicious oat meal.

If I had more jars I would probably prepare a weeks worth at a time because they keep forever, before I add the milk.

This breakfast usually keeps me fueled up for hours because it has a lot of protein and grains... I usually take a later lunch on days that I eat this breakfast!

Tip- Granola can get pretty pricey so I strongly recommend making your own (oats, dried berries, brown sugar, nuts, seeds, honey/maple syrup, apple sauce/mashed ripe banana baked for 20 minutes at 325 degrees). OR purchasing it at my favorite store- Trader Joes! where it is not only organic, but the price of regular cereal (just make sure you check the nutrition facts and try to find one with a lower sugar content)

  1. Have you ever tried overnight oats or bircher muesli? Similar concept, but you add the milk (of your choice!)/ milk+grated apple (for the muesli) the night before. By the morning it's ready to eat! I can't do the bircher muesli, but I've done overnight oats and it's fab! I'm also very jealous that you get to shop at Trader Joes! The nearest one for me is over an hour away.

  2. I kind of got the idea for this from overnight oats! I just like the crunchiness that is retained from the granola, not to mention I don't always think that far ahead!... I tried doing this recipe with this blueberry muesli that I got from Trader Joes and it was too mushy for mys taste. But yes, I am ADDICTED to Trader Joes- everything is SO wonderful and cheap!

I am so fortunate to have so many whole food markets at my disposal- I can choose from Trader Joes, Whole Foods, Fresh Market and Ellwood Thompsons! there is also a Kroger and Martins (regular supermarkets) all in the same square! I also hear tell that a Whole Foods is moving walking distance from my apartment and a Wegmans is coming relatively close too! (Nostalgia from my Wells Days).

I used to find grocery shopping so draining but now that I have found all these wonderful places to shop in Richmond I look forward to going every time the fridge starts to empty out!
