3 Bean and Corn Salad

Tired of potato or macaroni salad this summer???

Super healthy, vegan, gluten free, filling, easy, cheap and DELICIOUS


Here is what you need: 
1 can tri beans (black, kidney, great northern) $1
1/2 bag of frozen (roasted) corn $1
1/4 white onion, diced $0.50 (green or red would also be great)
1/3 sweet pepper, diced $0.50
1 generous handful of cilantro, finely chopped $1
juice of half a lime $0.25
sprinkle of sea salt, black pepper, paprika

Cook corn on skillet or in microwave until defrosted and wonderful
Put all ingredients into a mixing bowl and sprinkle with sea salt, black pepper, paprika and mix together!

 I ate it plain for lunch today but for dinner I would put it over rice and tomorrow I’ll probably throw it in a tortilla with sour cream and avocado and shredded lettuce for a burrito and it will be awesome for taco salad. and lets not forget chip dip- add avocado, sour cream and/or salsa

the corn and beans mixed together forms a complete protein and its so versatile so I made a huge bowl of it (3 or 4 servings) which costs like $4 total

Perfect for lunch, snacks, dinner and get-togethers!
